Welcome to Darlene’s Ice Cream, where owner Joy Williams-Clark and her husband, Kyle Clark, create a rainbow of frozen treats that would make the shop’s namesake, Grandma Darlene, proud.

There’s nothing like a triple scoop in a freshly pressed waffle cone to entice the phone-eats-first crowd into making decisions based on the brightest, boldest colors—and ending up with a teetering tower of mismatched flavors. That’s unlikely to happen at Darlene’s Ice Cream, which began serving scoops in a sunny Aurora strip mall space in January.

Owners Joy Williams-Clark and her husband, Kyle Clark, spent years in Denver’s top kitchens (sometimes in the same restaurants) before combining their talents to offer a rainbow of frozen delights that complement one another in unexpected ways. Top your mango chile sorbet with caramelized pineapple or banana Nutella ice cream for sweet, tropical overtones balanced by spicy notes. Like the look of the roasted strawberry jam flavor? Add a dollop of toasted sesame with red miso caramel to evoke the best peanut butter and jelly sandwich you’ve never had.

The couple also makes fudgy brownies and chocolate chip cookies as well as ice cream toppings from scratch. Hot honey or Darlene’s salty mix (which includes potato chip crumbles) adds visual appeal and a savory edge to your cone or cup. 3105 S. Peoria St., Aurora
